The cheeses from the mountainous region of Piedmont, Italy are varied, nuanced, and often subtle. The cheeses, like the wines, are products of a region of historical wealth, closer in spirit to France than to Southern Italy. Instructor Andy Lax imports the cheeses of affineurs Luigi Guffanti and Occelli.
